Online poker cash game players often use software such as Poker Office to record what happens in each hand they play. The software will overlay on the poker table, beside each player and display a summary of how that player has played in the previous hands. Common useful statistics shown are how many hands that player has played, how many times they have seen a flop and how often they raise pre flop.
This is very useful information but it really only serves as an aid to your own memory. The real benefit of this information comes when you have access to many hundreds of hand histories your opponents have played because the more data you have on a player, the more accurate that data is.
Players will buy datamining applications that watch tables for them to gather hands - a time consuming endeavor, or they can purchase hands that somebody else has datamined.
